INCEPTION! Russian Chicken and a Strawberry Salad

I have been OBSESSED with this recipe for a few months now. Every time I have someone new over (or go to their house) I make this recipe. It's THAT good! And super easy to make, that is until you go gluten free, then it becomes a challenge. I had to do a recipe inside a recipe.

There's literally four ingredients. Chicken (pieces, breasts or thighs, it honestly doesn't matter), onion soup mix, Russian dressing and apricot jam (yes, I'm serious). Now the hard part is the Russian dressing. I found an awesome recipe for it and I found its way less greasy than if you were to use dressing from the store. Ingredients:





1/3 cup of salad oil (Olive oil, vegetable oil. Whatever)
1 cup of sweet pickle juice (I used homemade)
1 cup of ketchup (Or chili sauce)
3/4 cup of sugar
1/4 cup white vinegar
1 tsp of paprika
1 tsp ground pepper
1 tsp celery seed
1/2 tsp garlic powder
1 dash of salt.
(If you don't have all the spices use Mrs. Dash it tastes great, and you can't even tell the difference. Although I made sure there was extra garlic powder and pepper)

Combine salad oil, pickle juice, vinegar, and white sugar in a jar and shake. Add ketchup. Shake. Add spices. Shake. And you've made homemade russian dressing!

Alright. Down to business.


Ingredients:
1 Small jar of apricot jam (10 oz) (I used homemade)
1 Small container of Russian dressing (16 oz) (or one full recipe from above)
1 pouch of onion soup mix (or a couple tablespoons of 3 onion dip mix)
4-6 Chicken breasts (I would make this for 4 because I love lots of sauce on my rice)





Combine in the slow cooker on high for a few hours until chicken is cooked. There isn't really a need to mix it together. I just flip them half way through.

Now for this recipe I also made a strawberry salad with homemade strawberry vinaigrette.

Ingredients:

5 fresh strawberries
2 tbsp olive oil
1 tbsp white vinegar (apple cider vinegar)
1 squirt of mustard
2 tbsp juice (anything that would complement the strawberries)
salt
pepper
cayenne

Blend.
*Do note these are very rough estimates. I never measure my ingredients for my dressings. I like it more acidic so I usually add more vinegar. Just go by taste, you will get the hang of it, I promise!
